Getting Tipsy – Quick fix meal tips
1: Use Pre-cooked Meats - In your grocery deli, you can often buy roast beef or roasted turkey, both of which are lean meat choices.
Fresh off the rotisserie or grill, skinless chicken breasts, whole chickens, and half turkey breasts. Shred or cut the meat as needed. Also, you can buy cooked shrimp at the fish counter or in the frozen fish section.
2. Main Dish Salad – Use fresh bagged salad greens or spinach leaves. Add the rest of the ingredients and toss. Add-ins include cheese, grilled chicken, cherry tomatoes, baby carrots, dried cranberries, walnuts, etc.
3. Make It Vegetarian and skip the meat. Some easy vegetarian entrees include bean and cheese burritos, vegie burgers. Egg based entrees like omelets, and vegetarian sandwiches featuring cheese and/or roasted vegetables, quesadillas and tacos. You can also add grilled salmon, chicken breast to the main dish to make it a Mexican style meat entree.
4. Whip Up a Stove-Top Meal - Grilled sandwiches or use a panini press. Quesadillas, Omelets, BLT sandwich, fajitas take 5 minutes to make if you buy your meat already cut into small pieces and use bottled fajita sauce.
5. Make a Microwave Meals in Minutes - Make mealtime nachos by layering multigrain tortilla chips, canned vegetarian refried beans or black beans, shredded reduced-fat cheese, chopped green onions and tomatoes, and grilled or roasted chicken breast on a microwave-safe plate and cooking on HIGH for a minute or two. Or you can make a burrito to order by filling a whole-grain flour tortilla with your fillings of choice, wrapping up into a burrito shape, and microwaving for a minute or two.
6. Low-Fuss Veggies - Bags of baby carrots, Asparagus spears, washed spinach leaves. For potatoes and sweet potatoes (just pierce each a couple of times and microwave), Cherry and grape tomatoes, canned tomatoes, canned beans and bags of precut broccoli and cauliflower florets.
7. Fruit Salad - serve up a side of raspberries, blackberries, and blueberries, grapes, apple slices, bananas canned pineapple chunks, strawberries.
8. Use Bottled Sauces, dressings, and marinades - Bottled salad dressing, marinara, pizza sauce, jar of salsa, taco sauce, salsa verde, enchilada sauce, teriyaki sauce, fajita sauce, asian cooking and dipping sauces like hoisin or even a Pesto sauce
History – Fast Food
Fast food is the term given to food that can be prepared and served very quickly. While any meal with low preparation time can be considered to be fast food, typically the term refers to food sold in a restaurant or store with preheated or precooked ingredients, and served to the customer in a packaged form for take-out/take-away.
Curb service was introduced in the late 1920s and was mobilized in the 1940s when carhops strapped on roller skates.
The United States has the largest fast food industry in the world, and American fast food restaurants are located in over 100 countries. Approximately 2 million U.S. workers are employed in the areas of food preparation and food servicing including fast food in the USA.
Fast food outlets are take-away or take-out providers, often with a "drive-through" service which allows customers to order and pick up food from their cars; but most also have a seating area in which customers can eat the food on the premises.
Nearly from its inception, fast food has been designed to be eaten "on the go", often does not require traditional cutlery, and is eaten as a finger food. Common menu items at fast food outlets include fish and chips, sandwiches, pitas, hamburgers, fried chicken, french fries, chicken nuggets, tacos, pizza, hot dogs, and ice cream, although many fast food restaurants offer "slower" foods like chili, mashed potatoes, and salads.
Appetizer – Cucumber Salsa This fresh and fruity salsa uses peach preserves as a base, and adds ingredients like fresh mint, chopped peaches, and red onion.
Ingredients: 1/2 cup peeled, chopped cucumber 1/2 cup peach preserves 2 peaches, peeled and chopped 1 Tbsp. chopped fresh mint 1/4 tsp. salt Dash white pepper 2 Tbsp. minced red onion 1 Tbsp. lime juice Chips
Directions: Combine all ingredients in medium bowl and stir to blend. Cover and chill 1-2 hours to blend flavors. Serve with grilled meats or as a dip with tortilla chips. 6-8 servings
Salad – Shrimp Veggie Salad Use any frozen vegetable combination in this easy five ingredient seafood salad recipe.
Ingredients: 1 cup Rotini pasta 16 oz. pkg. frozen carrot and snap peas, cooked and drained 1 cup grape tomatoes 9 oz. pkg. frozen cooked shrimp, thawed and drained 1/2 cup honey mustard salad dressing Basil top for decoration
Directions: Cook Rotini as directed on package and drain. Mix with remaining ingredients and chill at least 1 hour to blend flavors. Serves 5
Put it on the Side – Cheesy Garlic Bread
Ingredients: 1-12oz. French bread loaf 3 garlic cloves, peeled and chopped Pinch of salt 1 cup (4 oz.) shredded Italian six-cheese blend 1/4 cup butter, softened 1 teaspoon Italian-herb seasoning
Directions: 1. Preheat oven to 350°. Cut bread diagonally into slices.
2. Place peeled/chopped garlic cloves on cutting board with salt. Smash garlic and salt together using flat side of a knife to make a paste.
3. Stir together garlic paste, cheese, butter, and Italian-herb seasoning. Spread butter mixture on 1 side of each bread slice. Place bread on a baking sheet.
4. Bake at 350° for 5 to 7 minutes or until golden and cheese is melted.
Main Course – Shepherd's Pie
Ingredients: 1 lb. lean ground beef 1 onion, chopped 2 cups frozen mixed vegetables 10 oz. can cream of mushroom soup with roasted garlic 1 tsp. dried marjoram leaves Salt and pepper to taste 3 cups refrigerated mashed potatoes
Directions: Preheat oven to 375 degrees. In heavy skillet cook ground beef and onion until beef is brown and onion is tender, stirring to break up meat, about 10 minutes. Drain well. Stir in vegetables and soup and cook until hot, about 4 minutes, then add marjoram and salt and pepper to taste.
Place in 9 inch pie plate. Spoon mashed potatoes over hot meat mixture. Bake at 375 degrees for 35-45 minutes until potatoes are golden brown and pie is bubbling. Serves 6.
Dessert – Baked Peaches with Granola
Ingredients: 4 large ripe peaches 5 Tbsp. butter, softened 2/3 cup sweet granola Vanilla Ice Cream or Whipped Cream
Directions: Preheat oven to 350 degrees. Cut peaches in half and remove the pit. Leave the skin on so the peaches hold their shape while baking. Place peaches cut side up on a baking sheet with sides. Pour 2 tablespoons water into bottom of pan. Place 1 teaspoon butter into each peach half.
Bake at 350 degrees for 20-30 minutes or until peaches are soft and slightly brown. Meanwhile, melt remaining butter in small saucepan and stir in granola. Cook for 2-3 minutes or until granola is well coated with butter. Remove peaches from oven, place on serving dish and sprinkle with warm granola. Serves 4. Serve Ice cream and/or Whip Cream on the side.

Ingredients: 1 1/2 cups fat-free sour cream 1/2 cup brown sugar 2 tablespoons amaretto liqueur 1 quart fresh strawberries, hulled and halved (reserve 6 whole for garnish)
Directions: In a small bowl, whisk together the sour cream, brown sugar and liqueur.
In a large bowl, add the halved strawberries and sour cream mixture. Stir gently to mix. Cover and refrigerate until well chilled, about 1 hour.
Scoop the strawberries into 6 colorful bowls or chilled sherbet glasses. Garnish with whole strawberries and serve immediately. Nutritional Analysis - (per serving) – Serves 6
